Minions!

Those Despicable Me Minions have been quite popular this year with everyone collecting the toys and now  cakes! Two birthday, two minions, one with a banana, and the other with a personal sized birthday cake!

Hockey City

I'd say 90% of the people who live in Canada are hockey fans. It's our thing and we love playing it, watching it, what have you. Although the majority of Vancouverites are Canucks fans, there are the few who do like the Maple Leafs. With them making a comeback in the recent years, this cake is for one such fan.

Russian Bird's Milk Cake

I got a request a while back for a Russian Bird's Milk cake. I had never heard of this cake before so I had to do a bit of research on it. I found a few recipes on it and it based on the Russian Bird's milk candy which is a chocolate covered marshmallow candy. Most of the cakes called for a sponge on the bottom, topped with a marshmallow made with either condensed milk or sour cream. I chose the condensed milk version with a joconde sponge. The birthday girl also really liked mangoes and her other choice was a napolean type cake so I thought I'd combine them into one cake and give it some texture with an almond feuilletine base and fresh mangoes inside. A super shiny dark chocolate glaze on top swirled with some purple glaze and topped off with chantilly and chocolate flowers and curls made it extra special. I was worried because I had never had the cake before so I wasn't quite sure what I was aiming for or if I was doing it correctly but my worries were eased when I was told that I made all the Russians at the table proud with my cake:)

Lovebirds in Fuschia

This wonderful cake was created for my friend who had a white and fuschia wedding. The lovebirds at the top were made from gumpaste and adorned with a tiny bowtie and top hat for the groom, and lovely lace veil for the bride. Cascades of vintage buttons, flowers, and ruffles made this cake elegant but still a bit whimsical.

These adorable baby cookies are part of the wonderful baby shower Georgia was hosting. They weren't sure of the gender so we decided on a neutral yellow and green. The baby bum is super cute as well!

Banana Cream Cake

This cake was for a client who's father loved Banana Cream Pies. I decided to emulate that in a cake using puff pastry as the "pie shell" crunch, some banana infused custard, and caramelized bananas. Sandwiched with chantilly cream and a moist vanilla buttermilk cake, this cake definitely is out of the box and stands out with the bright yellow chocolate decorations. I was even able to find mini bananas to decorate with. I love all things mini:)

Simply Wonderful Wedding

This recent wedding cake was especially dear to me because it was for a friend of mine. Being able to be a part of her special day was amazing and I was really happy to be able to lend a hand with the wedding cake. They wanted a nice simple design with just some fresh flowers matching her bouquet. The flavor was well suited for the wonderful summer weather; a nice lemon cake with lemon curd and raspberry jam. Light and flavorful.

This small tiered cake was for a beautiful wedding that was happening on the Sunshine Coast. A simple design with pretty gum paste flowers decorating it dusted with lustre so that it would catch the light.

Ombre ruffles

This was my first ruffle cake and I'm pretty happy with the results. It was a lot of work though. First off, coloring all the hues of fondant and then frilling all the edges of the ribbons. This is a definitive princess girly cake. All the ruffles and fading pinks and purples with the pinky ivory flowers would be a fairy princess' dream come true.

Make It So.



For all the Trekkie fans out there, here's the Star Trek Enterprise ship. This was for a big Star Trek fan's baby shower complete with phasers and a baby! Structurally, this cake was gave me a huge headache trying to support all the weight of the cake on the back end, not to mention trying to fondant all the corners and crevasses. It worked out in the end and she was happy with it so that's what matters.

Teddy Bears

Cute, girly, pretty, and fun. All the things this cake embodies for a one year old's birthday. "Forever Friends" type teddy bears among dozens of pink-hued flowers.

My Brandy Alexander

Criteria from client: make a cake with brandy in it. The first thing that came to mind when I thought of brandy was a Brandy Alexander.The drink that Feist wrote a song on, the old school drink containing, brandy, creme de cacao, cream, and nutmeg. This cake was my take on it.

Brandy soaked chocolate sponge, a layer of creamy dark chocolate custard, nutmeg spiced caramel gelle, and a brandy alexander flavored mousse. Enrobed in a taupe colored glaze and dusted lightly with cocoa powder and nutmeg to mimic the drink and surrounded with a spiced chocolate soil to give it some good texture.

Matcha and Azuki

This matcha azuki cake was made for a friend's mother's birthday. An almond joconde band surrounding matcha white chocolate mousse. Inside was a light matcha chiffon and cooked azuki beans. A thin layer of gelle on top before the cascade of chocolate curls and ribbons and cubes of yokan (a firm jelly made with agar) made from azuki bean paste and matcha. I love the color contrast and the different textures and heights make it really interesting.

Suitcases



These two cakes were for a client that had traveled the world and loved all the memories that came with it. I thought these antique "suitcase" cakes would work really well  with travel stickers of all the places she's been to. As you can see, it's a lot of stickers but it definitely made the cakes stand out against the antique brown.
